&lt;li&gt;1/2 onion, finely chopped&lt;/li&gt;
&lt;li&gt;1 (8-ounce) package tempeh, crumbled&lt;/li&gt;
&lt;li&gt;Unrefined sea salt, to taste&lt;/li&gt;
&lt;li&gt;1 teaspoon paprika&lt;/li&gt;
&lt;li&gt;2 pinches cayenne pepper&lt;/li&gt;
&lt;li&gt;1 teaspoon cumin&lt;/li&gt;
&lt;li&gt;1 cup frozen corn kernels, thawed&lt;/li&gt;
&lt;li&gt;11/2 cups good-quality, all-natural prepared marinara sauce&lt;/li&gt;
&lt;li&gt;1 (4.5-ounce) can chopped green chiles&lt;/li&gt;
&lt;li&gt;1/4 cup chopped fresh cilantro&lt;/li&gt;
&lt;li&gt;1 (14.5-ounce) can black beans, rinsed and drained&lt;/li&gt;
&lt;li&gt;4 red bell peppers, tops removed and seeded&lt;/li&gt;
&lt;li&gt;1/2 cup shredded, low-fat organic cheddar cheese&lt;/li&gt;
&lt;/ul&gt;&lt;h3&gt;Instructions&lt;/h3&gt;
&lt;ol&gt;&lt;li&gt;
&lt;p&gt;Heat the oil in a large nonstick skillet to medium-high; add garlic and onion, and sautée until onion is just tender, about 3-4 minutes. Add the tempeh and sautée for 3-4 minutes. Season onion and tempeh with salt to taste. Mix in the paprika, cayenne pepper, cumin, and corn kernels.&lt;/p&gt;

&lt;p&gt;In a small bowl, whisk together the marinara sauce and green chiles. Pour the marinara–green chile mixture into the skillet with the tempeh; mix well to combine. Stir in the cilantro and black beans.&lt;/p&gt;

&lt;p&gt;Stuff the peppers with the tempeh mixture. Arrange the peppers in a 5- or 6-quart slow cooker. Cover and cook the peppers on high for 2 hours or on low for 4 hours.&lt;/p&gt;

&lt;p&gt;Remove the lid and top the peppers with the shredded cheese, replace the cover, and cook on high for 15-20 additional minutes. Allow peppers to cool 10-15 minutes before serving. Serve warm.&lt;/p&gt;

Turned out great together, but when I do these again I’ll go with the more mini-mini cheesecakes, because they really accentuated the peanut butter cup middle. I will also cut the frosting recipe in half as I ended up with a lot leftover, and though I didn’t mind sitting up at midnight watching K-dramas and eating it straight from the mixing bowl, I’m trying to make better life choices. Also, if you stick to a regular sized cupcake pan, be prepared to consider the possibility of having batter for more then the stated dozen in the recipe. Not a bad thing, but something to keep in mind if you only have one muffin pan and not enough energy to bake one batch and then wash your pan before baking another smaller batch.&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;Spicy baked egg muffins&lt;/strong&gt;&lt;br/&gt;&lt;br/&gt;&lt;em&gt;cornmeal&lt;br/&gt;8 large eggs&lt;br/&gt;1 cup ricotta cheese&lt;br/&gt;1/2 teaspoon cayenne powder&lt;br/&gt;1/2 teaspoon salt&lt;br/&gt;2 green onions, sliced (both white and green parts)&lt;br/&gt;1/4 cup of coarsely chopped grape or cherry tomatoes&lt;br/&gt;1 large jalapeño pepper, minced&lt;br/&gt;fresh ground black pepper&lt;br/&gt;fresh grated Monterey Jack cheese&lt;/em&gt;&lt;br/&gt;&lt;br/&gt;Preheat the oven to 350°. Grease 8 cups of a standard (2 1/2 inch diameter) muffin tray with butter. Put the tray in the preheated oven for a minute to melt the butter. Remove, and spoon a little cornmeal into each greased cup, just enough to cover the bottom.&lt;br/&gt;&lt;br/&gt;Pour the eggs, ricotta cheese, cayenne and salt into a blender and beat until smooth. Stir in the green onions, tomatoes, jalapeño and plenty of fresh ground black pepper.&lt;br/&gt;&lt;br/&gt;Pour the egg mixture into each muffin cup, filling them right to the rim. Bake in the center of the oven for 10 minutes, then remove and sprinkle on a little of the grated Monterey Jack cheese on each muffin. Return to the oven and bake for about 12 more minutes, or until the puffed-up tops are just starting to turn golden and are slightly firm to the touch.&lt;br/&gt;&lt;br/&gt;Remove the tray from the oven and let cool for five minutes.
